For this one we merge the two... as if the Portmanteau of Banoffee (banana and toffee) wasn't enough... we squeeze in the elements of a trifle too. My grandma, always loved Red Velvet Cake, when she was 14 she spent the good part of a summer testing out red velvet cake recipes to take to the Minnesota State Fair! She won 10 years in a row, before she was told to retire the recipe by the state board, which was just a group of uppity women jealous of her abilities! So what did my grandma do, she started making German Chocolate Cake and competed with that for another 15 years and always placing in the top three!

My dad traveled to England quite often around 1999-2001. On one if his stays, he ate in an inn where they served banoffee pie, which he hadn't heard of til then. He asked for the recipe, which the inn's owner happily supplied, and he brought it back home where we have been making it at least once a year ever since. Always a treat to see new ways to make one of my favorites.
