This might be the best ground beef recipe in the world. We’re making the ultimate steak haché, the classic French chopped steak that inspired America’s Salisbury steak. After travelling to Paris to try a traditional steak haché, we combine classic French bistro techniques with the best elements of a Salisbury steak recipe. The bee

The video explores the history, preparation, and ultimate recipe for Steak Haché (also known as Salisbury steak in America), tracing its origins from French butchers maximizing cheaper cuts of meat to upscale bistro versions in Paris, and contrasting them with American TV dinners.

Key Highlights and Steps in the Recipe

Choosing the Beef:

a prime cut of beef, specifically a picanha from the top of the rump, which features beautiful intramuscular marbling [00:29].

Hand-Chopping the Meat:

While most people use standard ground beef, traditionally steak haché is made from hand-chopped steak ([01:05]). Finely slicing and chopping the meat by hand yields a superior texture compared to a standard fine mince ([01:14]).

ion from Paris:

The host visits Allé-Dor, a 100-year-old bistro in Paris that serves traditional steak haché without a bun or cheese—functioning essentially as the arch-enemy of the modern smash burger, cooked to achieve a thick, caramelized crust and a coarse texture [02:28].

Confit Garlic & Shoestring Fries:

s on, creating soft, melty confit garlic to use as a topping [03:36].

Fries: Thinly cut, unpeeled potatoes are soaked in water to remove excess starch, then fried at around 170°C to create an ultra-crispy accompaniment [05:33].

Cooking the Patties:

The patties are formed, seasoned with salt and pepper, and cooked straight from the fridge in a hot pan to ensure a great crust forms [06:33

].

Unlike a standard burger, the cooking process borrows techniques from steak preparation: finishing with foaming butter, fresh thyme, and extra garlic cloves to baste the meat [08:02].

The patties are rested on toasted white bread that acts as a flavor sponge to absorb the delicious pan juices [09:38].

The Peppercorn Sauce:

Shallots are sautéed to deglaze the pan with a knob of butter

([09:50]).

A blend of freshly cracked white, red, and black peppercorns is toasted in the pan [04:39].

Brandy is added to burn off the alcohol, followed by beef stock, heavy cream, brined green peppercorns, Dijon mustard, cherry vinegar, fresh lemon juice, tarragon, and parsley [10:23].

Plating:

The dish is assembled with the rich peppercorn sauce on the base, followed by the fried bre

ad, the beautifully pink steak haché, the soft confit garlic, and topped with a nest of crispy shoestring fries [11:21].

The Comparison:

At the end of the video, the host compares the gourmet homemade steak haché to an American Hungry-Man Salisbury steak TV dinner, humorous results included [11:55].

I like to put my ground beef between two cartouches. Best recipe in my repertoire
@Office-q7k
Putting it on a round piece of bread, no less. Never beating the hamburger allegations.

Fun fact it’s called a Salisbury steak in America because in the 1800’s Dr Salisbury promoted a low carb diet based around minced beef burgers… The man basically invented the keto diet before it was a thing.

“Tastes like a boiled flip flop”. As an American, I 100% agree and I have had it

Very nice way to get a business trip to Paris 🤣👌🏻
@charliekirkham4336
My local super market spent a summer selling picanha at low prices and I don't think people knew what to do with it, so I felt like I had them all to myself. Great times. Made burgers out of one too.

Boiled flip flop got me thru 2 years of high school

With the addition of the fried bread it's actually pretty close to what's known in Denmark as a pariserbøf (Paris Steak). Here you put the burger on the bread and fry bread side down first, then flip. It's served with chopped gherkins, horseradish, pickled beetroot, capers and red onion and with a raw egg-yolk on top

I had steak haché in Paris in the mid 80's. It was seared almost black on the outside, and rare on the inside and it blew my mind. I think it was the first time I really tasted beef.
@meatwhisperer
Dude!!! That looks incredible!!! You should add that to your menu and be the only ones in London serving it!
